Too good to be wasted!

In the past, nothing was wasted! Every single edible part was exploited, becoming a fundamental ingredient of another recipe.

It’s thanks to whom had to start from scratch, passed through wars and privations, suffered by hunger, cultivated the fields, learnt artisanal skills, built up the culinary history and worked hard to reach the progress, that today there is all this abundance.

There will have been less technology, but there was more intellingence, more creativity!!!
